Shahi Makhana Burfi


This Indian sweet is specially made on the Janmashtami (birth celebration of lord Krishna). It is a healthier version of kaju katli.  Makhana (lotus seeds) or foxnut which is a superfood, packed with several micronutrients, including calcium, magnesium, iron, and phosphorus. Makhana is rich in protein and fiber, which may be beneficial for weight loss. This recipe contains only 1 tbsp ghee. It can be made in less than 30 minutes and it tastes great!

Ingredients:

  • 2 cups Makhana seeds
  • ½ cup Cashew
  • ½ cup Milk powder (I used Nido milk powder)
  • 1 cup milk
  • ¾ cup sugar
  • 1 tsp cardamom powder

Method:

  • Dry roast makhana seeds until they turn crisp and easily crush into a powder
  • Remove them from the pan and let them cool  
  • In the same pan, dry roast cashew for 3-4 minutes and transfer to a plate
  • Once makhana and cashew cool down, grind them separately to fine powder

  • Pour milk into a wide pan and bring it to a boil
  • Simmer until it reduces slightly
  • Add the sugar and stir until it completely dissolves in the milk
  • Then add makhana powder, cashew powder, milk powder and cardamom powder to sweetened milk, stirring continuously to avoid lumps
  • Stir the mixture constantly on medium-low heat until it thickens, leaves the sides of the pan, and forms a soft dough-like mass
  • Add ghee, mix well and turn off the flame

  • Grease the plate with some ghee and transfer the dough to it (you can use the parchment paper too)
  • Once it cools down, knead the dough and with the help of rolling pin, spread it evenly to desired thickness
  • Cut it into diamond shapes

  • Keep it in the refrigerator for 30 minutes
  • Store in the container and enjoy!
