Phodnichi Poli


This is a very popular Maharashtrian breakfast, usually made with leftover rotis/poli/Indian flatbread. I used frozen rotis to make this dish. The Phodnichi Poli is also called as Poli Upma or Roti Upma too. Phodni means tempering and poli means wheat roti.

Ingredients:

  • 4-5 rotis
  • 1 medium sized onion
  • 2 green chilies
  • Few curry leaves
  • Chopped cilantro

  • Oil
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • Salt
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp lemon juice
  • Pinch of sugar (optional)
  • You can use peanuts or veggies additionally

Method:

  • Crush rotis either with hands or in the mixer
  • Chop onions
  • Take a pan, add oil and heat it
  • Once oil is hot, add mustard and cumin seeds and let them crackle
  • Add green chili pieces and curry leaves
  • Add onion and saute it until it gets translucent
  • Add turmeric powder, red chili powder, salt and mix well
  • Then add crushed roti and mix well

  • If the mixture is dry, sprinkle some water, cover with lid and let it cook well
  • Keep stirring
  • Add lemon juice, sugar and cilantro
  • Adjust the salt
  • Mix well and cover
  • Cook for another 1-2 minutes
  • Serve hot.
