This is a very popular Maharashtrian breakfast, usually made with leftover rotis/poli/Indian flatbread. I used frozen rotis to make this dish. The Phodnichi Poli is also called as Poli Upma or Roti Upma too. Phodni means tempering and poli means wheat roti.
Ingredients:
- 4-5 rotis
- 1 medium sized onion
- 2 green chilies
- Few curry leaves
- Chopped cilantro
- Oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- Salt
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp lemon juice
- Pinch of sugar (optional)
- You can use peanuts or veggies additionally
Method:
- Crush rotis either with hands or in the mixer
- Chop onions
- Take a pan, add oil and heat it
- Once oil is hot, add mustard and cumin seeds and let them crackle
- Add green chili pieces and curry leaves
- Add onion and saute it until it gets translucent
- Add turmeric powder, red chili powder, salt and mix well
- Then add crushed roti and mix well
- If the mixture is dry, sprinkle some water, cover with lid and let it cook well
- Keep stirring
- Add lemon juice, sugar and cilantro
- Adjust the salt
- Mix well and cover
- Cook for another 1-2 minutes
- Serve hot.
