Jowar (Sorghum) Flour Dosa


Jowar (Sorghum) is a tasty, quick and gluten-free recipe. It does not need any fermentation. It is made with jowar flour, rice flour and spices.

Ingredients:

  • 1.5 Cups Jowar flour/ Sorghum millet flour
  • ¼ cup rice flour
  • Salt to taste
  • ¾ cup finely chopped onion
  • 1-2 green chilies

  • Finely chopped cilantro
  • ¼ cup dahi/plain yogurt
  • 1 tsp cumin seeds
  • ¼ tsp turmeric powder
  • 1 tsp red chili powder

Method:

  • Make very thin batter/watery with jowar flour, rice flour, dahi and 4 cups of water
  • Add chopped onions, cilantro, cumin seeds, chopped green chilies, turmeric powder, red chili powder and salt
  • Mix well and let it stand for 10 minutes

  • Take a dosa pan, heat it on the stove
  • Brush with about 1 teaspoon of oil
  • Pour the watery batter from 4 inches high with circular motion
  • Do not spread the batter with a ladle/spoon
  • Dosa should have lot of holes which makes it crispy
  • Drizzle some oil over the top
  • Cook dosa batter to brown on the bottom
  • Cook on one side only (if you see uncooked batter, you can turn it with the spatula and cook on both sides)
  • With a spatula, carefully loosen the dosa from the griddle
  • The bottom should be crisp and beautifully browned
  • Enjoy the crispy dosa with any chutney!
