Jowar (Sorghum) is a tasty, quick and gluten-free recipe. It does not need any fermentation. It is made with jowar flour, rice flour and spices.
Ingredients:
- 1.5 Cups Jowar flour/ Sorghum millet flour
- ¼ cup rice flour
- Salt to taste
- ¾ cup finely chopped onion
- 1-2 green chilies
- Finely chopped cilantro
- ¼ cup dahi/plain yogurt
- 1 tsp cumin seeds
- ¼ tsp turmeric powder
- 1 tsp red chili powder
Method:
- Make very thin batter/watery with jowar flour, rice flour, dahi and 4 cups of water
- Add chopped onions, cilantro, cumin seeds, chopped green chilies, turmeric powder, red chili powder and salt
- Mix well and let it stand for 10 minutes
- Take a dosa pan, heat it on the stove
- Brush with about 1 teaspoon of oil
- Pour the watery batter from 4 inches high with circular motion
- Do not spread the batter with a ladle/spoon
- Dosa should have lot of holes which makes it crispy
- Drizzle some oil over the top
- Cook dosa batter to brown on the bottom
- Cook on one side only (if you see uncooked batter, you can turn it with the spatula and cook on both sides)
- With a spatula, carefully loosen the dosa from the griddle
- The bottom should be crisp and beautifully browned
- Enjoy the crispy dosa with any chutney!
