
Beetroot raita is a nutrient-dense, low-calorie dish, helpful for weight loss and boosts digestion due to its high fiber and probiotic content.
Ingredients:
- 1 cup grated beetroot
- ½ cup chopped cilantro
- 1 tbsp Urad dal
- 1 tsp mustard seeds
- ½ tsp cumin seeds
- 1 tsp ghee or oil
- 1 pinch of hing
- Salt

- 1 cup fresh curd/plain yogurt
- Spices to add curd:
- Black salt
- Red chili powder
- Cumin powder
- Amchur (green mango powder)
- Black pepper powder
Method:
- Wash, peel the skin and grate the beetroot


- In a pan, add ghee and heat it
- Add mustard seeds, cumin seeds to melted ghee and let them crackle
- Add hing and then add urad dal
- Fry it until dal turns golden
- Add grated beetroot, mix well
- Add salt, mix it well and cook until beetroot becomes softer
- Add chopped cilantro
- Turn off the stove and let the mixture cool down
- While it is cooling down, make a curd base
- Churn the curd (you can add some water to adjust the consistency)
- Then add all the spices to curd, mix well
- Once cooked beetroot mixture cold down, transfer it to spice curd mixture
- Mix well and enjoy! It goes well with biryani or parathas or as a side dish with any meal.
