This is my own creation/recipe. I use a lot of greens to make a batter and hence my children call it green dosa.
Ingredients:
- 2 cups rice flour
- ¼ cup gram flour (besan)
- 3 eggs
- Curry leaves
- Cilantro
- 4-5 green chilies
- 1-inch ginger
- ½ cup plain yogurt/dahi
- Salt
- Oil
Method:
- Grind green chilies, cilantro, curry leaves, and ginger to the smooth paste
- Mix all the ingredients together and make a flowing batter by adding water
- Add salt and mix well
- Let it stand for 15 minutes
- Take a dosa pan, heat it on the stove
- Brush with about 1 teaspoon of oil
- Pour one ladle of batter into the center of the griddle. Using the bottom of the ladle, quickly spread the batter outward in a circular motion
- Drizzle some oil over the top
- Cook dosa batter to brown on the bottom. Cook on one side only
- With a spatula, carefully loosen the dosa from the griddle. The bottom should be crisp and beautifully browned.
- Serve with butter.
