This chutney goes well with any types of dosa or idli.
Ingredients:
- 2 cups tomato pieces
- 1/4 cup peanuts
- 3-4 red chilies
- Chopped cilantro
- Marble-size jaggery (optional)
- Salt
- 1 tsp red chili powder
- Oil
- Mustard seeds
- Cumin seeds
- 1-inch ginger
- 4-5 garlic cloves
Method:
- Wash, dry and cut tomatoes into pieces
- Take a pan, and add oil to it.
- Once oil is hot, add cumin seeds and let them crackle
- Add dried red chili, garlic and ginger pieces and fry them
- Add peanuts and roast them until they change color
- Lastly, add tomato pieces, chopped cilantro, salt, red chili powder and jaggery
- Cook it until tomatoes soften
- Cool the mixture and grind to thin paste
- Prepare tempering: heat 2 tsp oil, add mustard seeds, cumin seeds, and hing. Let them crackle. Then add red chili pieces
- Add this tempering to chutney, mix well and serve with rice, roti or dosa.
