Moong sprouts and oats Khichdi


Moong beans are known as green grams. Sprouted moong beans are very healthy and can be easily done at home. Another option will be buying it from the supermarket.

How to make sprouts: Take one cup of whole moong beans, wash and soak in water for overnight.

The next day, drain the water and transfer them to a piece of thin cotton or muslin cloth or a napkin. Tie the ends of the cloth and tighten it into a bundle. Place it in a clean bowl. Keep covered for 1-2 days in a dark and warm place. Make sure you keep the cloth moist all the time. You can sprinkle water when needed. Feel free to continue letting the moong sprout for another day or so to get longer sprouts.

 

Ingredients:

  • 1 cup green moong beans and sprout them
  • 1 cup dry rolled oats 
  • Oil or butter or both 1 tsp
  • Onion 1 small
  • Tomato 1 medium 
  • Cumin seeds 1 tsp
  • Cinnamon ½ inch
  • Bay leaves 1-2
  • Ginger-garlic paste 1 tsp
  • Turmeric powder ¼ tsp
  • 2-3 Dried red chili 
  • Salt
  • Lemon juice (optional)
  • Cilantro -chopped

Method:

  • Take a pan, add oil/butter to it, and heat.
  • Add cumin seeds, bay leaves, cinnamon, ginger-garlic paste
  • Then add chili pieces
  • Add sliced onions and saute until they turn golden.
  • Add tomatoes
  • Add turmeric powder, salt, and lemon juice (optional).
  • Mix and let it cook for 1-2 min

  • Add sprouted moong beans and oats
  • Mix well
  • Add 4 cups of water. Add chopped cilantro (or you can garnish it after the dish is ready).
  • I use the instant pot for this. Pressure cook for 9-10 min. you can cook on the stove or use a regular pressure cooker.
