Khichdi is an Indian staple food that is a blend of cooked lentils and rice seasoned with mild spices. Masala Khichdi is a one-pot nutritious meal made with rice, moong dal, beans, veggies and mild spices. You can use sprouted beans to make it more nutritious.

Ingredients:

  • 1½ cup khichdi mix (rice + split moong dal with skin)
  • 1 tbsp olive oil or ghee
  • ½ tsp mustard seeds
  • ½ tsp cumin seeds
  • ¼ tsp Hing
  • ½ tsp red chili powder
  • 1/3 tsp curry leaves powder (optional)
  • ½ tsp turmeric powder
  • Salt

  • ¼ cup chopped cilantro
  • 3-4 garlic cloves
  • ½ tsp ginger paste
  • Chopped vegetable (peas, beans, carrots)
  • 1 medium onion-chopped
  • 1 tomato- chopped
  • 1 tsp lemon juice
  • Any sprouted or soaked beans (here I used Navy beans)

Method:

  • Wash rice and moong dal, drain
  • Take a pan, add olive oil/ghee, and heat it
  • Add mustard seeds, and cumin seeds and let them crackle
  • Add hing powder, garlic pieces, ginger paste and fry them
  • Add chopped onions and saute until golden
  • Add turmeric powder, red chili powder, curry leaves powder and salt

  • Mix well and add veggies and soaked beans
  • Mix well and cook for 1 minute
  • Then add chopped cilantro and tomato
  • Once the mixture cooks well, transfer this to drained khichdi mix
  • Add 5 cups water
  • Add lemon juice, adjust salt, mix and cook on “pressure cook” setting for 10 minutes in InstantPot
  • Enjoy the tasty and nutritious masala khichdi with ghee, pickle and papad!
