Makhana Kheer


Makhanas, also called foxnuts or lotus seeds. It contains antioxidants and is rich in several micronutrients, including calcium, magnesium, iron, and phosphorus. Makhana is rich in protein and fiber, which may be beneficial for weight loss.

Makhana kheer is a sweet dessert pudding made with Makhana (foxnuts), milk, ghee, sugar and dry fruits.

Ingredients:

  • 1 cup phool makhana
  • 1 tbs ghee
  • ½ cup sugar
  • 500 ml milk
  • 1 tbs raisins
  • 1 tbs cashews
  • 1 tsp cardamom powder
  • 7-8 threads of saffron

Method:

  • Take a pan, add ghee, and heat it.
  • Add makhana seeds, roast them until they change color, and keep them aside. This makes them crunchy. Let them cool down.
  • Once they cool down, crush them to coarse powder. Some people crush half of makhana and keep rest without crushing.

  • In the same pan, add ghee and roast cashews and raisins. Keep them aside.
  • Take milk in a cooking pot and let it boil until it reduces to desired consistency.

  • Add sugar, cardamom powder, and saffron. Mix well.
  • Lastly add makhana mixture and fried cashew and raisins. Mix well, and turn the stove off in 1-2 minutes.
  • You can either serve it hot or keep it in the refrigerator for 1-2 hours to serve it cold.
