It is called Pulihora in Telugu. This is a very easy recipe. You can use leftover rice too.
Ingredients:
- Cooked white rice- 1 cup
- Turmeric powder ¼ tsp
- Cooking oil (peanut oil or olive oil or avocado oil) 1-2 tsp
- Mustard seeds ½ tsp
- Cumin seeds ½ tsp
- Green chili 1-2 or as per your taste
- Red chili pieces
- Raw peanuts- fistful
- Cashew (optional)
- Lemon juice 2 tsp
- Chana daal+ urad daal 1 tsp (optional)
- Salt as per taste
- Curry leaves 5-6
- Cilantro (coriander leaves)
- Onion sliced (optional)
Method:
- Cut green chilies into small pieces.
- Chop cilantro.
- Heat 2 tsp oil in a pan.
- Add mustard seeds, cumin seeds and let them crackle
- Add chana daal, urad daal. Saute them until lightly golden
- Add peanuts and roast them until crunchy.
- Add curry leaves, chili pieces and fry them.
- Add sliced onions if you want to use it.
- Add turmeric, salt, and hing (optional)
- If rice is freshly cooked, add the above tempering to rice and mix.
- If rice is cold, add cooked rice to the pan and mix.
- Add lemon juice and mix.
- Lastly, garnish with cilantro.
