Curd is Indian yogurt. It is a great source of probiotics. You can make it at home or use the store-bought curd. Other names are Dahi in Marathi/Hindi and Perugu in Telugu. It is made with precooked rice. You can use brown rice or millets or oats or any combinations. Here, I am giving the recipe with white rice.

Ingredients:

  • Cooked white rice- 1 cup
  • Curd 1 cup
  • Milk ½ cup
  • Oil 1 tsp
  • Mustard seeds ½ spoon
  • Cumin seeds ½ spoon
  • Dried red chili pieces (you can use green chili pieces instead)
  • Urad daal 1 tsp
  • Salt
  • Curry leaves 5-6
  • Cilantro (coriander leaves)
  • Cashew pieces
  • Grated carrots and pomegranate seeds are optional.

Method:

  • Chop cilantro.
  • Add curd, milk to rice and mix well. Keep it aside.
  • Heat 2 tsp oil in a pan.
  • Add mustard, cumin, and urad daal. Saute them until lightly golden.
  • Add cashew pieces and roast them.

  • Add curry leaves and fry them.
  • Add salt, and hing (optional)
  • Add the above tempering to the mixture of curd and rice. 
  • Some people use grated carrots and pomegranate seeds for this dish. If you want, you can add them to the rice, and lastly, garnish with cilantro.
