Curd is Indian yogurt. It is a great source of probiotics. You can make it at home or use the store-bought curd. Other names are Dahi in Marathi/Hindi and Perugu in Telugu. It is made with precooked rice. You can use brown rice or millets or oats or any combinations. Here, I am giving the recipe with white rice.
Ingredients:
- Cooked white rice- 1 cup
- Curd 1 cup
- Milk ½ cup
- Oil 1 tsp
- Mustard seeds ½ spoon
- Cumin seeds ½ spoon
- Dried red chili pieces (you can use green chili pieces instead)
- Urad daal 1 tsp
- Salt
- Curry leaves 5-6
- Cilantro (coriander leaves)
- Cashew pieces
- Grated carrots and pomegranate seeds are optional.
Method:
- Chop cilantro.
- Add curd, milk to rice and mix well. Keep it aside.
- Heat 2 tsp oil in a pan.
- Add mustard, cumin, and urad daal. Saute them until lightly golden.
- Add cashew pieces and roast them.
- Add curry leaves and fry them.
- Add salt, and hing (optional)
- Add the above tempering to the mixture of curd and rice.
- Some people use grated carrots and pomegranate seeds for this dish. If you want, you can add them to the rice, and lastly, garnish with cilantro.
