Corn Spinach Curry


You can use this dish as a curry or a side dish or eat like a salad. The proportions of corn and spinach varies based on your taste.

Ingredients:

  • 1.5 cups corn (I used frozen corn)
  • 2 cups finely chopped spinach
  • Oil
  • Salt

  • 1 tsp cumin seeds
  • 1 tsp Turmeric powder
  • 1 ½ tsp red chili [powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • ½ tsp dried mango powder

Method:

  • Wash and cut spinach
  • Take a pan, add oil, let it heat
  • Add cumin seeds and let them crackle
  • Add corn, mix well and cook on low heat for 2 minutes

  • Add chopped spinach, mix well and cover the lid
  • Once spinach becomes soft, add salt, red chili powder, turmeric powder, cumin powder, coriander powder, and dried mango powder

  • Mix well
  • Adjust the salt and chili flavor
  • Cook it for another 2-3 minutes
  • Turn off the stove
  • Serve hot
