You can use this dish as a curry or a side dish or eat like a salad. The proportions of corn and spinach varies based on your taste.
Ingredients:
- 1.5 cups corn (I used frozen corn)
- 2 cups finely chopped spinach
- Oil
- Salt
- 1 tsp cumin seeds
- 1 tsp Turmeric powder
- 1 ½ tsp red chili [powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- ½ tsp dried mango powder
Method:
- Wash and cut spinach
- Take a pan, add oil, let it heat
- Add cumin seeds and let them crackle
- Add corn, mix well and cook on low heat for 2 minutes
- Add chopped spinach, mix well and cover the lid
- Once spinach becomes soft, add salt, red chili powder, turmeric powder, cumin powder, coriander powder, and dried mango powder
- Mix well
- Adjust the salt and chili flavor
- Cook it for another 2-3 minutes
- Turn off the stove
- Serve hot
