Banana Bread and Muffins


The best bananas to use for banana bread are those that are overripe. 

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/3 cup Butter
  • 1 large egg
  • 1/2 teaspoon Baking soda
  • 3 very ripe bananas

  • 3/4 cup Brown sugar
  • 1 teaspoon Vanilla extract
  • Pinch of salt
  • Optional: Chopped nuts (walnuts and cashews)

Method:

  • Melt the butter
  • Mash bananas with a fork
  • Beat the egg
  • Add melted butter to the mashed banana and mix well
  • Add sugar, vanilla extract, beaten egg, baking soda, and salt and mix well
  • Then add flour and mix well with a whisk

  • Preheat the oven to 350°F (175°C)
  • Grease/butter a loaf pan
  • Pour the batter into your prepared pan
  • Sprinkle nuts on top of the batter

  • Bake for 55 to 65 minutes at 350°F (175°C), or until a toothpick inserted into the center comes out clean
  • Remove from oven and let cool in the pan for a few minutes

  • Then remove the banana bread from the pan and let cool completely before serving
  • Slice and serve

The same batter can be used to make banana muffins

  • Scoop batter into lined muffin tin, filling each 2/3 full

  • Bake for 55 to 65 minutes at 350°F (175°C), or until a toothpick inserted into the center comes out clean
  • Remove from oven and let cool for a few minutes
