The best bananas to use for banana bread are those that are overripe.
Ingredients:
- 1 1/2 cups all-purpose flour
- 1/3 cup Butter
- 1 large egg
- 1/2 teaspoon Baking soda
- 3 very ripe bananas
- 3/4 cup Brown sugar
- 1 teaspoon Vanilla extract
- Pinch of salt
- Optional: Chopped nuts (walnuts and cashews)
Method:
- Melt the butter
- Mash bananas with a fork
- Beat the egg
- Add melted butter to the mashed banana and mix well
- Add sugar, vanilla extract, beaten egg, baking soda, and salt and mix well
- Then add flour and mix well with a whisk
- Preheat the oven to 350°F (175°C)
- Grease/butter a loaf pan
- Pour the batter into your prepared pan
- Sprinkle nuts on top of the batter
- Bake for 55 to 65 minutes at 350°F (175°C), or until a toothpick inserted into the center comes out clean
- Remove from oven and let cool in the pan for a few minutes
- Then remove the banana bread from the pan and let cool completely before serving
- Slice and serve
The same batter can be used to make banana muffins
- Scoop batter into lined muffin tin, filling each 2/3 full
- Bake for 55 to 65 minutes at 350°F (175°C), or until a toothpick inserted into the center comes out clean
- Remove from oven and let cool for a few minutes
