Aloo Vada (Batata Vada)


Aloo=batata=potato. Vada=fried snack. Batata Vada is a fried snack of batter-coated mashed potato fritter. It is a popular Mumbai street food.

Ingredients:

  • 1 cup besan or chickpea flour
  • 1 tbs rice flour
  • ½ tsp salt
  • ½ tsp turmeric powder
  • ¼ tsp red chili powder
  • Oil for deep frying
  • 1 pinch baking soda
  • 2 potato / aloo (boiled & mashed)
  • 1 tsp ginger paste
  • 1 tsp lemon juice (optional)
  • Chilies (coarse paste)
  • 2 tbs cilantro (finely chopped)

Method:

  • Boil, peel, and mash the potatoes.
  • Mix ginger paste, chili paste, lemon juice, cilantro, salt, and mashed potatoes together. Make lemon-sized balls.
  • Take chickpea flour in a mixing bowl.
  • Add rice flour, turmeric powder, red chili powder, and salt. Mix well.
  • Then add water to make a smooth batter. It should not be too thick or too thin. Then add baking soda.
  • Heat oil in a pan for deep frying. You might need 1 cup oil for 8-10 lemon-sized vadas.
  • Take an aloo ball and dip it into the batter.
  • Gently coat it with the batter evenly all over.
  • Then gently place the batter-coated vada in hot oil.
  • Add vadas depending on the size of the pan.
  • Fry on medium flame.
  • When one side becomes opaque and lightly golden, turn each vada with a spoon.
  • Continue to fry the other side.
  • Turn them a couple of times till they are golden.
  • Take out the fried vadas from the pan.
  • Place them on kitchen paper towels.

It can be served with either fried green chilies, or roasted peanut chutney, or coconut chutney.

It can be used to make another popular street snack called Vada-Pav. Pav means bread roll. A bread roll is cut partially into half, batata vada is placed in it and spicy chutneys are added.
