Aloo-Palak (Potato-Spinach) Curry


This is a very simple and healthy Indian dish where spinach and potatoes are cooked together with spices.

Ingredients:

  • 4-5 Potatoes
  • 3 cups chopped spinach
  • ½ cup fried onions (you can use fresh onions if you want)
  • 3-4 dried red chili
  • 1 tsp Cumin seeds
  • Salt
  • Oil
  • 1 tsp red chili powder
  • 1 tsp Coriander powder
  • 1 tsp Cumin powder
  • 1 tsp Garam masala
  • 1 tsp dried mango powder or lemon juice (optional)
  • 2-3 garlic cloves

Method:

  • Peel and cut potatoes in medium sized pieces. Keep them in a bowl of water to avoid oxidization.
  • Heat oil in a pan on medium heat. Once the oil is hot, add the cumin seeds and let them sizzle for few seconds.
  • Then add hing (optional), chopped garlic and dried red chilies. Break the dried red chilies before adding to the pan for more heat.
  • Cook for 1 minute until the garlic starts changing color. Then add potato pieces and mix well.
  • Once potato pieces start becoming soft, add fried onions and mix well.

  • Add red chili, turmeric, coriander, cumin powder, salt and garam masala.
  • Add 3 tablespoon water, mix well and cover the lid.
  • When potatoes are almost done, add chopped spinach, mix well and cover the lid.
  • Lastly, add lemon juice or dried mango powder, adjust the salt and turn off the stove.
  • Serve hot with hot steamed rice or roti.
