Broccoli Cheddar Soup


This is the recipe of creamy broccoli cheddar soup, similar to Panera soup.

Ingredients:

  • 1 lbs. Broccoli
  • 3 tbsp butter
  • 1 cup finely chopped onion
  • 3-4 garlic cloves, crushed
  • 4 tbsp All-purpose flour
  • 3 cups Vegetable or chicken broth

  • Salt
  • Pepper powder to taste
  • Paprika (optional)
  • 1 cup grated carrots
  • 2 cups Half&half or whole milk
  • 6 oz Cheddar cheese, grated

Method:

  • Wash and cut broccoli in small chinks, including stems
  • Grate carrots, keep aside
  • Grate Cheddar cheese and keep aside
  • In a pot, melt the butter
  • Add chopped onions and saute for 3-4 minutes until turns golden
  • Add minced garlic and saute for 1 minute
  • Add flour and cook it until turns golden

  • Then add broth and mix well until no lumps
  • Add chopped broccoli, grated carrots, salt, pepper, paprika
  • Mix well and bring it to boil, then reduce the heat to low and simmer for 15 minutes (until broccoli cooks well)
  • Add Half&Half, grated cheese and stir well
  • Cook for another 2 minutes
  • Serve hot!
