
This is the recipe of creamy broccoli cheddar soup, similar to Panera soup.
Ingredients:
- 1 lbs. Broccoli
- 3 tbsp butter
- 1 cup finely chopped onion
- 3-4 garlic cloves, crushed
- 4 tbsp All-purpose flour
- 3 cups Vegetable or chicken broth

- Salt
- Pepper powder to taste
- Paprika (optional)
- 1 cup grated carrots
- 2 cups Half&half or whole milk
- 6 oz Cheddar cheese, grated
Method:
- Wash and cut broccoli in small chinks, including stems
- Grate carrots, keep aside
- Grate Cheddar cheese and keep aside
- In a pot, melt the butter
- Add chopped onions and saute for 3-4 minutes until turns golden
- Add minced garlic and saute for 1 minute
- Add flour and cook it until turns golden



- Then add broth and mix well until no lumps
- Add chopped broccoli, grated carrots, salt, pepper, paprika
- Mix well and bring it to boil, then reduce the heat to low and simmer for 15 minutes (until broccoli cooks well)
- Add Half&Half, grated cheese and stir well
- Cook for another 2 minutes
- Serve hot!
