Veggie Omelet Muffins


This is a healthy (no oil), high protein, low carb dish which can be made in 30-40 minutes.

Ingredients:

  • 9 eggs
  • ½ cup milk
  • 1.5 cups chopped vegetables (onions, peppers and spinach)
  • Salt
  • Pepper
  • ½ cup shredded cheese

Method:

  • Readymade shredded cheese can be used. Here I used savory garlic cheddar cheese.
  • Preheat oven to 375 F
  • Grease the 12-cup muffin tin

  • Whisk eggs + milk, add pepper and salt
  • Mix all chopped veggies and cheese
  • Fill muffin cups 1/3 with veggie mix

  • Pour egg mix to fill 3/4th full
  • Bake for 25 minutes until turns golden
  • Cool slightly and then serve!
