Soya Chunks Pulao is a flavorful rice dish made with protein-rich soya chunks, basmati rice and spices. You can add any combination of vegetables. Here, I used only potatoes. Dried soya chunks or nuggets are easily available in any India grocery stores (Nutrela brand is very popular).
Ingredients:
- Whole spices
- 2-3 bay leaves
- 1-inch cinnamon
- 4-5 cloves
- 4-5 green cardamoms
- 2 black cardamoms
- 1 tsp black pepper corns
- ½ tsp cumin seeds
- 1-2-star anise
- 1 cup potato long pieces
- 2 cups basmati rice (soaked for 20 min)
- 1 medium onion (thinly sliced)
- 1 tsp ginger paste
- 1.5 cups Soya chunks
- 2-3 dried red chili
- 1 tbs biryani masala powder
- 2 tbs ghee
- ½ cup dahi
- 1 tsp red chili powder
- salt
Method:
- Soak Soya chunks in hot water for 5 minutes
- Then squeeze water out of it and transfer them to a plate
- Add dahi, salt, red chili powder, biryani masala to soya chunks and coat them well
- Marinate it for 15 minutes
- Wash the rice with water, drain and keep it aside
- Add ghee to a pan and heat it
- Add whole spices (bay leaves, cinnamon, cloves, cardamom, star anise, pepper corns, dried red chilies and cumin) and saute for 1-2 minutes
- Add sliced onions, the ginger paste and fry them until onions turn golden
- Add potato pieces
- Then add marinated soya chunks
- Mix well and cook for few minutes
- Soya chunks start changing color slightly
- Add soaked and drained rice
- Mix well and cover it for 1 minutes
- Lastly, add 4 cups of water to it
- Mix well
- Taste the water mixture and adjust salt if needed
- Cover and cook on medium flame for 15-20 minutes
- Make sure the bottom is not burning by stirring it in between
- Once rice cooks well, turn off the stove
- Serve nutritious pulao with raita and dal.
