Dal Lauki (Dal Kaddu)


Dal Lauki or Dal Kaddu is a simple and healthy dal prepared with bottle gourd (aka doodhi, ghiya, anapakaya, sorakaya) and dal (any dal like toor dal, chana dal or masoor dal). You can make the same with ridge gourd in place of bottle gourd.

Ingredients:

  • 1 cup Toor dal (split pigeon peas)
  • 1 bottle gourd
  • 1 cup onion pieces (optional)
  • Garlic- small pieces
  • 1 tbs oil
  • ½ tsp mustard seeds
  • ½ tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • Salt

  • 3-4 dried red chilies
  • ½ cup tomato pieces
  • Curry leaves
  • Cilantro
  • 1/8 tsp Hing (asafetida)

Method:

  • Wash, and drain Toor dal
  • Wash, peel and cut the bottle gourd into small pieces
  • Add bottle gourd pieces, few garlic cloves, tomato pieces, salt and ½ tsp turmeric powder to the dal and add double the water to it and pressure cook together
  • You can use a pressure cooker (medium flame, 3 vigils) or instant pot (pressure cook for 19 min) or on the stovetop (until it cooks well).

  • Take a pan, add oil and heat it
  • Add mustard seeds, and cumin seeds, and let them crackle
  • Add garlic pieces, onions, hing, and saute until the rawness goes away
  • Add dried red chilies and curry leaves
  • Add turmeric powder, red chili powder and salt
  • Turn off the stove, add chopped cilantro and mix well
  •  Add this tempering to cooked dal mixture
  • Adjust the salt and enjoy the delicious dal either with rice or roti.
