Sambar rice is a one-pot, delicious and popular South Indian dish made with rice, lentils, mixed vegetables and spices.
Ingredients:
- 1 cup rice
- ½ cup toor daal
- 2 tbsp moong dal
- 1 tsp cumin seeds
- ¼ tsp methi seeds
- Small onions
- Tomato
- Green beans
- Eggplant
- Carrots
- 1 tbsp tamarind pulp
- 1 tbsp MTR sambar masala powder
- 1 tsp red choli powder
- ½ tsp turmeric powder
- Salt
For tempering:
- 1 tbsp oil
- 2 tsp ghee
- 1 tsp mustard seeds
- 1 tbsp urad dal
- Few black peppercorns
- Fistful of cashews
- Curry leaves
- Dried red chilies
- Pinch of hing
- Cilantro for garnishing
Method:
- Wash and drain rice+toor dal+moong dal
- Soak for 30 minutes
- Wash and cut all the vegetables and keep them aside
- Pressure cook (either in pressure cooker or instantpot) rice, dals, onions, all veggies, cumin seeds, methi seeds, sambar powder, red chili powder, turmeric powder, salt by adding 5 cups of water
- Transfer the cooked rice mixture to a cooking pot
- Start a low flame
- Add tamarind pulp by diluting it in one cup of water and add it to rice
- If needed, add 1 more cup of water to get desired consistency
- Prepare the tempering
- Heat oil + ghee
- Add mustard seeds, urad dal, hing, black peppercorns and cashew
- Then add dried round red chilies, curry leaves
- Once cashews changes color, turn off the flame and add it to the rice mixture
- Mix well, adjust salt and garnish with chopped cilantro
- Turn off the stove, add 2 tbsp ghee (optional) and serve hot!
