Mediterranean Chickpea Salad


Mediterranean Chickpea Salad is an easy and healthy salad, packed with protein, fiber and minerals.

Ingredients:

  • 1 can chickpeas, drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, chopped or diced
  • 1/4 cup onion, finely chopped
  • 2 tbsp olive oil

  • Juice of 1 lemon
  • Grated cheese
  • 1 tsp oregano
  • Salt and pepper to taste

Method:

  • Combine chickpeas, cherry tomatoes, cucumber, and onion in a large bowl
  • In a small bowl, whisk olive oil, lemon juice, oregano, salt, and pepper

  • Pour the dressing over the salad and toss to coat evenly
  • Garnish with fresh parsley before serving if you like!
