Mediterranean Chickpea Salad is an easy and healthy salad, packed with protein, fiber and minerals.
Ingredients:
- 1 can chickpeas, drained
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, chopped or diced
- 1/4 cup onion, finely chopped
- 2 tbsp olive oil
- Juice of 1 lemon
- Grated cheese
- 1 tsp oregano
- Salt and pepper to taste
Method:
- Combine chickpeas, cherry tomatoes, cucumber, and onion in a large bowl
- In a small bowl, whisk olive oil, lemon juice, oregano, salt, and pepper
- Pour the dressing over the salad and toss to coat evenly
- Garnish with fresh parsley before serving if you like!
