Traditionally almond or badam mithai is made with soaked and ground almond paste and sugar. I used almond flour and condensed milk and made three different sweets from the same mixture. This is very easy and instant recipe.
Ingredients:
- 2.5 cups almond flour
- 2 cups condensed milk
- 2 tbsp ghee
- t tsp Cardamom powder
- 4-5 saffron threads
- 1 tbsp milk
Method:
- Take store bought almond flour in a thick bottom pan
- Dry roast on low flame for 3 minutes
- Add condensed milk to it, mix well
- Cook on low flame with constant stirring
- Take milk in a bowl, add saffron threads, mix and add it to the almond flour mixture
- The mixture starts thickening
- Cook until the mixture starts separating from pan
- Add ghee and cardamon powder and continue to cook
- It should look smooth and moist
- Check if it is done: take a small portion of the mixture with a spoon, cool it down, grease your fingers and roll the ball. It should hold shape and not sticky. If sticky, cook little longer
- Transfer the hot mixture to a parchment paper
Badam katli: knead the mixture on parchment paper
- Cover with another parchment paper
- Roll with a rolling pin to a thin sheet
- Cut with a knife or pizza cutter to squares or diamonds
- Store it into an airtight container once it cools down
Badam laddoo: roll the mixture into smooth balls
Badam pedha: Take small portion of the dough and make a smooth ball and flatten it slightly
- You can leave them plain
- I used a jar cap as well as bottle cap to create design on the top of pedha
