Dev kheer or Ganesh Chaturthi kheer or thalikala payasam is a pudding made from hand made wheat flour thick noodles and sweetened with jaggery. Thalikalu is a Telugu word for noodles. It is also called Undravali kheer in some parts of Maharashtra. This festive kheer/payasam/pudding is made on Ganesh Chaturthi.
Ingredients:
- 1 cup whole wheat flour
- 1 cup jaggery
- 1-2 tablespoon cashew pieces
- 1-2 tablespoon almonds
- 3-5 cardamom, crushed to powder
- 1 cup milk
- 1 tbsp ghee
- ¼ cup grated coconut
Method:
- Take wheat flour, add water and knead to soft dough
- Keep it aside for 15 minutes
- In a pan, take ghee and melt it
- Add cashews and almonds and fry them for 1 minute
- Add coconut and fry it until it changes color
- Add jaggery and mix (best way is to add jaggery at the end after noodles cook completely)
- It will start melting
- Then add 2 cups of water and let it boil
- While water is boiling, start making noodles from the dough
- These noodles usually are thick
- Sprinkle dry wheat flower over noodles so they do not stick to each other
- Once water starts boiling, add all noodles to it
- Mix well and cover
- Cook it for 20 minutes
- Add water if needed
- Lastly add cardamom powder
- Check with your hands if noodles cooked well
- Once done, turn off the stove
- While serving kheer, add either warm or cold milk to it and mix well
- It tastes heaven!
