Ginger paste & storage


Ginger paste is a versatile ingredient of Indian cooking. Homemade ginger paste is fresh, all-natural, and easy to make. You can freeze the ginger paste and store for up to 4-5 months.

Ingredients:

  • 1 cup ginger cubes
  • 1 tsp salt
  • ¼ tsp hing

Method:

  • Wash the fresh ginger and remove any bad or dried-out spots
  • Peeling the ginger is optional (I do not peel it)  
  • Cut the ginger into small cubes
  • Throw it in a blender along with salt and hing
  • If the paste seems overly dry, add some olive oil
  • Grind it to a smooth paste

  • Take an aluminum foil, add paste to it and spread evenly with the spoon
  • You can remove excess water from the paste if you want
  • Freeze it for one hour
  • Take it out of the freezer and with knife or pizza cutter, cut into small squares
  • Place it in the freezer for one day

  • Lastly, separate the squares with hands and store them into either a zip lock bag or a glass jar
  • This way, fresh ginger paste will be handy for few months.
