Tomato curry is a very simple but delicious curry with tangy-spicy-sweetish taste.
Ingredients:
- 4-5 Tomatoes
- 1 cup finely chopped onion
- 9-10 curry leaves
- Cilantro
- 1-inch ginger
- Salt
- Jaggery
- 1 tsp mustard seeds
- 1 tsp Cumin seeds
- ¼ tsp hing
- Oil
- 1 tsp turmeric powder
- 1 tbsp garam masala
Method:
- Wash, dry tomatoes and cut into small cubes
- Chop onions
- Take a pot, add oil and heat it
- Add mustard seeds, cumin seeds and let them crackle
- Add hing, curry leaves and ginger paste
- Saute until it changes color slightly and rawness goes away
- Add chopped onion and fry it until it becomes translucent
- Add turmeric powder, red chili powder, salt, garam masala and mix
- Lastly add tomato pieces, mix and cook it with lid on
- Add jaggery and cilantro
- Tomato pieces should cook to mushy texture
- Adjust salt, and serve hot with rice, dosa or roti.
