Achari-aloo paratha is a slightly different recipe than aloo (potato) paratha. Along with mashed potato, either pickle gravy or dry pickle masala is added for stuffing. It gives a nice, tangy flavor.
Ingredients:
For dough:
- 1 cup wheat flour
- ½ tsp salt
- water (for kneading)
- 2 tbsp oil
For stuffing:
- 2 potato / aloo (boiled & mashed)
- 1 tbs Indian pickle or pickle masala
- Salt if needed
Method:
To make dough for paratha:
- Take wheat flour in a large bowl, add 1 tbs oil and ½ tsp salt. Mix well.
- Add water slowly and start kneading. Knead to a smooth and soft dough.
- Apply some oil on the surface of the dough and rest for 20 minutes.
How to make stuffing:
- Boil, peel, and mash the potatoes.
- Mix Indian pickle (only gravy, not mango pieces), mashed potato, and salt. Achari-aloo stuffing is ready.
How to make paratha:
- Make balls from the kneaded dough. Make balls of stuffing too.
- Take a dough ball, spread it with your hands, and place the stuffing ball in the center of it.
- Take the edges and start pleating bringing it to the center.
- Join the pleats together and secure them with tight pinching. Make sure the stuffing should not visible.
- Sprinkle some wheat flour and roll slightly thick.
- Transfer the rolled paratha to a heated flat pan and apply some oil on the top surface.
- Flip it and apply oil on another side too.
