Baingan bharta is a delicious roasted-smoked eggplant cooked with onion and tomatoes.
Ingredients:
- 1 Big eggplant
- 1 small onion- chopped
- 2 tomatoes- chopped
- 2-3 Dried red chilies
- 2 green chilies
- 5-6 garlic cloves
- Salt
- Oil
- 1 tsp Mustard seeds
- 1 tsp cumin seeds
- ¼ tsp hing
- ½ tsp red chili powder
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp garam masala
- Curry leaves
- 1 tsp lemon juice
Method:
- Wash and dry egg plant
- Give 3-4 vertical deep cuts to eggplant
- Insert green chilies and garlic cloves into the slits you made
- Coat eggplant with oil and also add some oil into the slits
- Now, we need to roast the eggplant on fire (you can use oven, air fryer or charcoal instead of stove)
- I use stainless steel rack over the stove top
- Place the eggplant over the rack and start roasting it on high flame
- Keep turning the eggplant to all the other sides and bottom until charred
- Once the skin of eggplant is charred, turn off the flame and let it cool
- Slowly peel off the skin completely
- Mash the roasted eggplant and keep it aside
- Take a cooking pot, add oil and heat it
- Once oil is hot, add mustard seeds, cumin seeds and let them crackle
- Add hing, pieces of dried red chilies, curry leaves and roast them
- Add onions, add turmeric powder
- Mix well and let the onion becomes translucent
- Add tomato pieces, mix well and let them cook well
- Add mashed eggplant and mix well
- Add red chili powder, salt, garam masala, coriander powder and lemon juice
- Mix all the ingredients well, cover the lid and let is cook on medium flame
- Keep mixing in between
- Once the mixture cooks well and oil starts separating, turn off the stove
- Serve hot with roti or rice
