Indian flat beans are known by different names in different Indian languages: Val papdi, papdi beans, Valor papdi, Chikkudukaya. These beans contain iron, magnesium, and calcium.
Ingredients:
- 3 cups fresh Papdi beans
- 1 cup sliced onion
- 4-5 curry leaves
- ½ cup chopped cilantro
- Jaggery as per your taste (optional)
- ¼ cup roasted peanut powder (can use grated coconut instead)
- 1 tsp oil
- ½ tsp mustard seeds
- ½ tsp cumin seeds
- 1 tsp turmeric powder
- ¼ tsp hing
- Salt
- 1 tsp garam masala
- 1 tsp red chili powder
Method:
- Wash and dry the beans.
- They need to be topped, tailed, and also need stringing. Pluck the end of a papdi with your hand and then pull downwards. Do the same on the other side. Then cut (with a knife) or pluck (with your hands) the beans into small pieces.
- Take a pot, add oil, and heat it
- Add mustard seeds, cumin seeds and let them crackle
- Add hing, curry leaves, and onion. Fry until onion becomes translucent
- Add beans and mix well. Add turmeric powder, mix well and cover with a lid
- After 2-3 minutes, add water and let the beans get softer
- Add red chili powder, garam masala, jaggery, cilantro, peanut powder, and salt,
- Mix well, cover the lid and cook for another 2 minutes and turn off the flame
- Serve hot with either roti or rice.
