Sabudana (Tapioca) Khichdi


Sabudana, also known as tapioca pearl or sago, is a starch extracted from the roots of tapioca and processed into pearl-like spears. Sabudana is gluten-free and has fiber in it. It is a high-carb and high-calorie food. It may cause a sudden rise in blood sugar levels. It should be consumed in moderation.

Sabudana Khichdi is a popular Indian breakfast recipe and fasting food made with sabudana (sago/tapioca pearls), potatoes, roasted peanuts, and cumin seeds.

Ingredients:

  • 2 cups Sabudana
  • 1.5-2 cups roasted peanut powder
  • ¼ cup roasted and peeled peanuts (optional)
  • 1 cup boiled potato pieces
  • 1 tsp cumin seeds
  • 1 tsp oil or ghee
  • Salt to taste
  • 2-3 green chilies

Method:

  • Rinse sabudana with water a few times by rubbing it with your hands until excessive starch goes away (until the water becomes clear)
  • Soak the sabudana by adding water until it dips completely  
  • Soaking time varies based on the quality of sabudana. I soaked it for 6 hours.
  • The sabudana must be able to mash easily when pressed between fingers. If it is still hard, then sprinkle some water and soak for 30 more minutes.
  • Dry roast peanuts until spots appear. Keep ¼ cup roasted peanuts after peeling the skin off.
  • Grind the rest of the peanuts to fine-to-coarse powder.
  • Cut the green chilies into small pieces.
  • Boil the potatoes. Peel them after they cool down and cut them into small pieces.
  • Take a pan and add oil or ghee to him.
  • Once the ghee is hot, add cumin seeds.
  • Add green chili pieces and then potato pieces to the ghee and mix well.
  • Once potato pieces turn to golden color, add sabudana, peanut powder, peanuts, and salt.
  • Mix well and keep stirring continuously on medium flame.
  • Cook until the sago pearls turn translucent.
  • Serve hot.
  • Sabudana khichdi is commonly consumed as a fasting food and some people do not use curry leaves and cilantro while making it. Otherwise, you can use them. Some people add sugar and lemon juice to it.
