Ridge Gourd Curry


Ridge gourd (Dodka or Birakaya) has many health benefits. It is rich in essential components like dietary fiber, water content, vitamin A, vitamin C, iron, magnesium, and vitamin B6. It is naturally low in calorie content, unhealthy saturated fats, and cholesterol. Ridge gourd curry can be made in many different ways. Here, I am giving the recipe of Ridge gourd with tomato and onion.

Ingredients:

  • 3 Ridge gourds
  • 1 cup onion pieces
  • 2 medium-sized tomatoes
  • 1 tbs oil
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • Curry leaves
  • ¼ tsp hing
  • 1 tsp turmeric powder
  • 2 tsp red chili powder
  • Salt to taste
  • 1 cup chopped cilantro
  • 1/3 cup roasted peanut powder

Method:

  • Wash, peel and cut the ridge gourds into cubes
  • Cut onion into small pieces
  • Cut tomatoes into pieces
  • Take a cooking pot, add oil, and heat it
  • Add mustard seeds and cumin seeds and let them crackle
  • Add hing powder and curry leaves
  • Add onion and fry it until golden in color
  • Add gourd pieces and add turmeric powder, salt to it
  • Salt helps with cooking
  • Once gourd pieces are more than half cooked, add tomato pieces. Mix well and cover the lid to cook them well. You can add some water if the mixture is dry.
  • Once pieces of gourd cook well and become soft, add peanut powder, cilantro, and red chili powder. Adjust the salt and turn off the flame.
  • Garnish with cilantro and serve with hot rice or roti.
