Buttermilk (Salty Lassi)



Lassi is a cooling and probiotic drink. It is made from curd or yogurt which has gut-friendly bacteria in it. There are many variations of lassi: salty lassi, sweet lassi, mango lassi, etc. Here I am giving a very simple recipe for salty lassi.

Buttermilk is called Taak (ताक) in Marathi and Majjiga in Telugu.

Ingredients:

  • 2 cups curd (either homemade or store-bought)
  • Water 2-3 cups or more/less to get the desired thickness.
  • Salt
  • ¼ tsp Ginger paste
  • ½ tsp Cumin powder
  • Optional: 1 small green chili-crushed, cilantro-chopped. You can use mint leaves if you like.
  • ¼ tsp pepper powder

Method:

  • Dry roast some cumin seeds in a pan on medium heat until it becomes golden brown and releases a nice aroma. Allow it to cool and then just crush using a pestle and mortar. Alternatively, you can easily buy it from any Indian grocery store.
  • Take curd and water in a pot. Add all the ingredients and churn them or use a whisk to blend them together. Lassi is ready for drinking. In hot weather, you can refrigerate it for one hour before consuming it or can add ice cubes to it.

Variation: Make a little thicker lassi and add the tempering to it.

Tempering can be made with curry leaves, green chili pieces, mustard seeds, cumin seeds, minced garlic, and hing. Add this tempering to lassi. This can be mixed with rice and rice+lassi be eaten with any curry!
