Vermicelli or semiya upma is a popular Indian breakfast dish. It becomes nutritious with the addition of veggies of your choice. You can buy vermicelli at an Indian grocery store. I always use Bombino brand. You can buy roasted vermicelli which can save your time of roasting while making this dish.
Ingredients:
- 2 cups vermicelli
- ½ cup chopped onion
- 1 tomato-chopped
- Oil
- Salt
- Lemon juice
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 2-3 dried red chilies
- 1 tbsp urad dal
- 1 tbsp chana dal
- ¼ cup cashews
- 1 cup veggies-I used peas and corn
Method:
- If you are using unroasted vermicelli, roast it on medium flame until it changes color
- Keep it aside
- Take a pot, add oil and heat it
- Once oil is hot, add mustard and cumin seeds and let them crackle
- Add urad dal, chana dal, dried red chili pieces and cashew
- Roast them until they change color
- Then add onion and cook until it gets translucent
- Add veggies and cook them for 2 minutes
- Then add tomato pieces, salt and turmeric powder
- Mix well, cover and cook until the mixture becomes soft
- Add 3-4 cups water (add double water if you want soft upma)
- Let the water boil
- Lastly, add vermicelli, mix well
- Add lemon juice, adjust salt
- Cook it until water gets absorbed
- You can garnish it with chopped cilantro
- Serve hot with plain yogurt.
