Vermicelli Upma


Vermicelli or semiya upma is a popular Indian breakfast dish. It becomes nutritious with the addition of veggies of your choice. You can buy vermicelli at an Indian grocery store. I always use Bombino brand. You can buy roasted vermicelli which can save your time of roasting while making this dish.

Ingredients:

  • 2 cups vermicelli
  • ½ cup chopped onion
  • 1 tomato-chopped
  • Oil
  • Salt
  • Lemon juice

  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 2-3 dried red chilies
  • 1 tbsp urad dal
  • 1 tbsp chana dal
  • ¼ cup cashews
  • 1 cup veggies-I used peas and corn

Method:

  • If you are using unroasted vermicelli, roast it on medium flame until it changes color
  • Keep it aside
  • Take a pot, add oil and heat it
  • Once oil is hot, add mustard and cumin seeds and let them crackle
  • Add urad dal, chana dal, dried red chili pieces and cashew
  • Roast them until they change color
  • Then add onion and cook until it gets translucent

  • Add veggies and cook them for 2 minutes
  • Then add tomato pieces, salt and turmeric powder
  • Mix well, cover and cook until the mixture becomes soft
  • Add 3-4 cups water (add double water if you want soft upma)
  • Let the water boil
  • Lastly, add vermicelli, mix well
  • Add lemon juice, adjust salt
  • Cook it until water gets absorbed
  • You can garnish it with chopped cilantro
  • Serve hot with plain yogurt.
