If you ran out of curry options, you can try this simple yet healthy recipe, which can be made with a few ingredients that are always available in every Indian household.
Ingredients:
- 2 medium-sized onions (Shallots can be used in place of onions)
- 1.5 cup urad dal
- 1 tsp Fenugreek seeds
- Tennis ball-sized jaggery
- 1 tbsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- ¼ tsp Hing (optional)
Method:
- Peel and cut onions into big cubes
- Take a pan, add oil, and heat it
- Once the oil is hot, add mustard and cumin seeds and let them crackle
- Add hing and then fenugreek seeds
- Let fenugreek seeds turn golden and then add onions
- Saute onions for 2 minutes
- Add washed and drained urad dal to it and mix well
- Then add turmeric powder, mix well and add 3-4 cups of water
- Cover with the lid and cook it on medium flame
- Once urad dal starts a little softened, add jaggery, salt, and red chili powder
- Mix well
- Add water to cook it to desired consistency
- Let it cook until urad dal cooks 90%
- Turn the stove off
- This curry goes well with rice or roti.
