This is a traditional Maharashtrian style one-pot dish prepared using tondli. Other names of Tondli are: Tindora, dondakaya, tendli, kovakkai. One of the benefits of the Tindora vegetable is that it helps lower blood sugar and is great for diabetics.
Ingredients:
- 2 cups rice
- 2 cups Tondli
- ½ cup chopped onion
- 2-3 green chilies
- Fistful curry leaves
- ¼ cup chopped cilantro
- 1 tsp cumin seeds
- Fistful cashews
- 2-3 bay leaves
- 4-5 cloves
- 4-5 cardamom
- 1-inch ginger piece or 1 tsp paste
- 1-inch cinnamon stick
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tbsp garam masala
- 1 tbsp coriander powder
- Salt
- 1 tbsp oil + 1 tbsp butter
Method:
- Rinse the rice with water 2-3 times until the water runs clear
- Soak the rice in 3-4 cups of water for 30 minutes
- Heat butter + oil in a pan
- Once the oil+butter is hot, add cumin seeds and let them crackle
- Add cashews, bay leaves, cardamom, cloves, cinnamon and fry them
- Then add curry leaves, ginger pieces/paste, slit green chilies and onions
- Fry until onions turn golden
- Add tondli pieces, mix well and cover for 2-3 minutes
- Add turmeric, red chili powder, garam masala, salt, and coriander powder
- Drain the water from the rice and add the rice to the pan
- Add 1: 2 cups of water, cilantro and stir gently
- Adjust the salt
- Transfer the mixture to another pot and pressure cook it either in instant pot or pressure cooker
- Once done, fluff the rice gently with a fork and serve hot.
