Tomato omelet is a vegetarian recipe made without eggs. It is a protein rich Indian veg omelet made with gram flour (besan) or chickpea flour, tomatoes, herbs and spices.
Ingredients:
- 3 tomatoes
- 1 cup besan
- ½ cup rice flour
- 2-3 green chilies
- Fistful curry leaves
- 2-3 garlic cloves
- 1 tsp cumin seeds
- 1-inch ginger
- Salt
- Oil
- 1 tsp turmeric powder
- 1 tsp red chili powder
- ½ tsp garam masala (optional)
- ¼ cup cilantro
- 1 tsp carrom seeds
- ¼ tsp baking soda (optional)
Method:
- Make a coarse paste of tomatoes, chili, ginger, garlic, curry leaves, cilantro and cumin seeds
- In a bowl, take besan and rice flour
- Add turmeric powder, red chili powder, garam masala, salt and carrom seeds (rub carron seeds on your palm with fingers before adding it to bowl which releases the flavor)
- Mix well and then add the tomato + spice paste
- Make a thick batter by adding water slowly
- Lastly, add baking soda, mix and keep it aside
- Heat a pan over medium heat
- Brush with about 1 teaspoon of oil
- Pour one ladle of batter into the center of the griddle
- Using the bottom of the ladle, quickly spread the batter outward in a circular motion
- Make sure that the batter spread is slightly thicker than a dosa
- Drizzle some oil over the top
- Cover it with a lid and cook until the bottom surface turns golden brown
- Flip it gently and cook the other side for a minute
- Transfer it to the plate and enjoy!
