This is the Indian flatbread stuffed with a mixture of roasted sesame powder, roasted peanut powder, and jaggery.
Ingredients:
- 1 cup wheat flour
- ¼ cup all-purpose flour
- 2 tbs oil
- ¼ tsp Salt
- ½ cup sesame
- ½ cup peanuts
- ½ tsp cardamom powder
- ¾ cup jaggery
- 1 tbs ghee (clarified butter)
Method:
For the dough:

- Take wheat flour and all-purpose flour in a large bowl, add 1 tbs oil and ½ tsp salt. Mix well.
- Add water slowly and start kneading. Knead to a smooth and soft dough.
- Grease oil and rest for 30 minutes.
For the stuffing:

- Dry roast sesame seeds on low flame until it changes color and keep aside.
- Dry roast peanuts on low flame and keep it aside.
- Grind sesame seeds, peanuts, and jaggery together.
- Add cardamom powder.
- Some people add roasted chickpea flour/besan to it for binding.
Make Tilgul poli:

- Make balls from the kneaded dough. Make balls of stuffing too.
- Take a dough ball, spread it with the hands, and place the stuffing ball in the center of it.
- Take the edges and start pleating bringing it to the center.
- Join the pleats together and secure them with tight pinching. Make sure the stuffing should not be visible.
- Sprinkle some wheat flour and roll slightly thick.
- Transfer the rolled roti to a heated flat pan and apply some ghee on the top surface.
- Flip it and apply ghee on another side too.
- Cook it until golden-brown spots appear. Serve hot or cold Tilgul poli with butter/ghee.
