This is a spicy and dry recipe to use as a side dish. Kala chana or black chickpea is a great source of protein, fiber, and iron.
Ingredients:
- 1 cup kala chana
- 2-3 garlic cloves
- ¼ cup chopped onions
- Cilantro
- Curry leaves
- 1 tsp oil
- ½ tsp mustard seeds
- ½ tsp cumin seeds
- ½ tsp turmeric powder
- ½ tsp red chili powder
- ½ tsp dried mango powder (amchur)
- ½ tsp cumin powder
- 1 tsp coriander powder
- ½ tsp garam masala
- ½ tsp chaat masala
- Salt
Method:
- Soak black chana in water overnight
- Discard the water
- Pressure cook chana in a small amount of water and ½ tsp salt on high pressure
- Heat the oil in a pan
- Once hot add mustard and cumin seeds and let them crackle
- Then add garlic pieces and curry leaves and fry them
- Take all the spice powders (red chili powder, cumin powder, coriander powder, amchur powder, garam masala, and chaat masala) in a bowl, and add 2 tbsp water to make a thin paste
- Add this paste to the pan and cook on low flame
- This will prevent the burning of spices
- Once the oil starts appearing, add cooked chana, mix well and cover
- Mix and cook until 80% of the moisture evaporates to form a thick gravy which will nicely coat the chana
- Serve this dry spice chana by garnishing with chopped onions and cilantro.
