Modak is a sweet dumpling, a favorite food of lord Ganesha. It can be made by two methods: fried and steamed modak. This is the recipe for steamed modak. They are called ukdiche modak in Marathi.
Ingredients:
- 1 cup rice flour
- Pinch of salt
- Ghee
- ¼ cup jaggery
- ¼ cup grated coconut
- Khawa/mawa (optional)
- 2-3 cardamom
- 1 tbsp poppy seeds (optional)
- Saffron (optional)
Method:
Stuffing:
- Heat ghee in a pan
- Add poppy seeds and let them crackle
- Then add grated jaggery and coconut
- Mix well and cook the mixture on a low heat
- Keep stirring
- Add cardamom powder and khawa (if you are planning to add)
- After 7-8 minutes, jaggery begins to dry
- You can add t tbsp rice flour to the mixture (optional)
- Mix well and let it cool down
Rice flour dough:
- Take 1.5 cups water in a pan, add ¼ tsp ghee, pinch of salt and bring it to boil
- Add 1 cup rice flour
- Quickly stir and mix the rice flour with water
- Turn off the heat
- Cover the pan with a lid for 5 minutes
- Transfer the dough to a plate and start kneading by adding some water
- Knead to a smooth and soft dough without any lumps
- Make small balls from the dough
- Roll the balls till smooth in your palms
- You can also apply some water on your palms, while rolling the balls
- Balls should not have any cracks
- Take a ball and flatten it with your fingers or on your palms to a round shape to a medium thickness
- Place a few teaspoons of the prepared stuffing in the center
- Fold the edges as shown in the picture
- Bring together all the edges and join them
- Remove the extra portion of the dough from the top
- Shape and taper the top of the modak with your fingers
- After you finish doing all modaks, grease a pan with some ghee
- Place modak in the greased pan
- Either is a pressure cooker or instant pot, place this modak pan on the trivet
- Set for high pressure cook option
- Water will start boiling and steaming process will start
- In 10-15 minutes, they will be done
- Ukdiche modak will be ready
- Well steamed modak are not sticky
- Add melted ghee over it before eating
- When using leftover refrigerated modak, sprinkle some water on it and then microwave till warm.
