Spinach and moong dal curry is a very simple, quick, and easy curry. It is a healthy way to get both greens and proteins in a dish. It is made dry and the moong dal is cooked soft but not mushy.
Ingredients:
- 2 cups washed and chopped Spinach
- ¼ cup thinly sliced onion
- 1 tsp oil
- 3-4 green chilies (you can use dried red chilies or red chili powder instead)
- 1 cup washed and drained Moong dal
- 1 tsp mustard seeds
- 1 tsp Cumin seeds
- ¼ tsp Hing
- Salt
- 1 tsp lemon juice (optional)
- 1 tsp Turmeric powder
Method:
- Wash and chop Spinach and keep it aside
- Slit green chilies vertically
- Cut onion into thin slices
- Wash and drain Moong dal
- Take a cooking pot, add oil to it, and heat it
- Once the oil is hot, add mustard and cumin seeds and let them crackle
- Add hing, slit green chilies, and onions
- Once onions turn translucent, add moong dal
- Mix well and cover it for 1-2 minutes
- Then add chopped spinach and turmeric powder and mix well
- Let it cook covered for 2-3 minutes and add ½ cup water
- Cook it covered
- Keep stirring in between and keep adding water as needed
- Cook it until moong dal becomes soft, but not mushy
- Lastly, add salt and lemon juice and turn off the stove
- Serve this curry with hot rice or roti.
