Spinach-Garlic Curry


If you have a lot of spinach, this is the perfect recipe to utilize it. Also, it is a very easy recipe and needs very few ingredients.

Ingredients:

  • 1-pound Spinach (I used a bag of baby spinach)
  • 5-6 garlic cloves
  • ¼ cup roasted peanut powder
  • Salt to taste
  • 1 tbs oil
  • ½ tsp mustard seeds
  • ½ tsp cumin seeds
  • ½ tsp turmeric powder
  • 1 tsp lemon juice (optional)

Method:

  • Wash and chop spinach
  • Cut garlic cloves into small pieces
  • Take a pot, add oil, and heat it
  • Add mustard seeds, cumin seeds and let them crackle
  • Add garlic pieces and fry them until they change color
  • Add spinach and mix well
  • Cover the pot.
  • Once spinach starts becoming soft, add turmeric powder, salt, and red chili powder
  • Cover it.
  • Within a few minutes, spinach cooks and the amount reduces to 1/3 of the original spinach.
  • Add roasted peanut powder and mix well.
  • You can add lemon juice if you are planning to.
  • Adjust the salt and turn off the stove.
  • This curry goes well with hot rice or roti.
