If you have a lot of spinach, this is the perfect recipe to utilize it. Also, it is a very easy recipe and needs very few ingredients.
Ingredients:
- 1-pound Spinach (I used a bag of baby spinach)
- 5-6 garlic cloves
- ¼ cup roasted peanut powder
- Salt to taste
- 1 tbs oil
- ½ tsp mustard seeds
- ½ tsp cumin seeds
- ½ tsp turmeric powder
- 1 tsp lemon juice (optional)
Method:
- Wash and chop spinach
- Cut garlic cloves into small pieces
- Take a pot, add oil, and heat it
- Add mustard seeds, cumin seeds and let them crackle
- Add garlic pieces and fry them until they change color
- Add spinach and mix well
- Cover the pot.
- Once spinach starts becoming soft, add turmeric powder, salt, and red chili powder
- Cover it.
- Within a few minutes, spinach cooks and the amount reduces to 1/3 of the original spinach.
- Add roasted peanut powder and mix well.
- You can add lemon juice if you are planning to.
- Adjust the salt and turn off the stove.
- This curry goes well with hot rice or roti.
