Sheera (Sooji Halwa)


Sheera is an Indian sweet made with fine semolina or cream of wheat (farina), sugar, ghee, nuts, saffron, milk, and flavored with cardamom powder. Semolina is called as suji, sooji or rava. Sheera is also known as rava sheera, rava kesari, sooji halwa or suji halwa. It is made for an auspicious/festive occasion or a pooja ceremony.

Ingredients:

  • 1 cup sooji
  • 1 cup Sugar
  • ½ cup Milk
  • 1 ½ cup water
  • ½ cup Ghee (even less than 1/2 cup)
  • 5-6 saffron threads (optional)
  • 1 tsp cardamom powder
  • ¼ cup nuts (cashews, raisins, almonds)

Method:

  • Take a pan, add ghee and melt it.
  • Add rava, mix it and roast in ghee on low flame
  • Once rava changes color to light brown, add cashew and almond pieces
  • Roast them together
  • Once aroma of rava and ghee starts spreading, add raisins to it
  • In another pot, heat 1.5 cups water
  • Add hot water to ghee-rava mixture slowly while stirring to avoid lumps

  • Add ½ cup milk and mix well
  • Keep stirring until water reduces and mixture starts becoming thick
  • Then add sugar, saffron threads, cardamom powder, and mix well
  • Cook the mixture for 2-3 minutes
  • Turn off the stove and serve hot
