Sabudana (or sago or Tapioca pearls) kheer is a simple but yummy pudding made with Sabudana, milk, sugar, dry fruits, saffron and cardamom powder.
Ingredients:
- ½ cup Sabudana
- ½ cup sugar
- 4 cups milk
- ¼ cup mawa powder (optional
- 1 tsp cardamom powder
- 7-8 Saffron threads
- ½ cup Dry fruit pieces (almonds, resins, cashews)
Method:
- Rinse sabudana (sago) for few times in running water until the water runs clear of starch
- Soak it in water for 3 hours
- Take a pot, add ghee and heat the pot
- Add dry fruit pieces and fry them until they change color
- Transfer it to a plate
- Add 4 cups of milk to a pot and bring it to boil
- Add mawa powder to milk, mix well and continue boiling it
- Adding mawa powder makes the milk thick and creamy
- Once the mixture gets little thickened, add soaked sabudana
- In a small bowl, take 2 tbsp milk, add saffron threads and mix well
- Add this saffron milk to the mixture and continue boiling
- Add cardamom powder, sugar and mix well
- Continue to simmer till the sabudana pearls have softened well and the kheer has thickened
- Once you get the desired consistency, add fried dry fruits
- Turn off the stove after 2 minutes
- Serve either hot or cold
