A quesadilla is a Mexican dish consisting of a tortilla that is filled primarily with cheese, vegetables, beans, spices, and other fillings, and then cooked on a griddle or stove. You can use any veggies of your choice.
Ingredients:
- Large whole wheat tortillas
- 1 can black beans
- 1 cup sour cream
- 1 tsp Taco seasoning mix
- 1 can black olives- sliced
- Finely chopped tomatoes
- Finely chopped green bell pepper
- Cilantro
- Oil or butter
- Grated cheese
Method:
- Take a pot
- Add 1 can of black beans, little water and cook it for 1-2 minutes
- Add 1 tsp of Taco seasoning mix
- Mix well and turn of the flame
- Heat a large skillet or pan
- Add small amount of oil or butter and spread it on the pan with a spatula
- Take one large flour tortilla and place it in the pan
- Flip the tortilla over a few times until air pockets begin to form
- Take a handful of grated cheese and spread it over the tortilla
- Add the black beans and Taco seasoning mixture which you already prepared
- Add ingredients of your choice-olives, tomatoes, bell pepper, mushrooms, onion, spinach, cilantro, corn etc
- Reduce the flame to low and cover the pan
- After a minute, check to see if the cheese is melted
- When cheese is sufficiently melted, use a spatula to lift up one side of the quesadilla and flip over the other side
- Tortilla should be browned slightly
- Remove quesadilla from the pan and cut into wedges
- Serve with sour cream, salsa and guacamole.
