Potato-Tomato Curry


Ingredients:

  • 4 Potatoes
  • 1 onion- medium-sized
  • 4 Tomatoes
  • 2-3 Garlic cloves
  • Cilantro for garnishing
  • Oil 1 tbs
  • Salt
  • Red chili powder
  • ½ tsp ginger paste
  • ¼ tsp Turmeric powder
  • 4 green chilies
  • ½ tsp mustard seeds
  • ½ tsp cumin seeds
  • Pinch of hing (Asafoetida)

Method:

  • Cut onions, potatoes, and tomatoes into cubes
  • Take a pan, add oil to it, and heat.
  • Add mustard seeds, cumin seeds and let them crackle.
  • Add ginger paste, garlic pieces, onions, and hing. Saute until the onion turns golden.
  • Add potatoes and let them cook until soft.
  • Add turmeric powder.
  • Then add tomatoes and cook until the potato becomes soft. You can add little water at this stage.
  • Add salt, and chili powder, and mix well.
  • Garnish it with cilantro and serve with Indian flat-bread (roti or paratha).
