Potato Curry (Sukhi Bhaji)


This is the dry (=sukhi) potato curry which can be used as main curry or side dish.

Ingredients:

  • 5-6 potatoes
  • 1 cup finely chopped onion
  • 9-10 curry leaves
  • Cilantro
  • 1-inch ginger
  • 4-5 green chilies

  • 4-5 garlic cloves
  • Salt
  • Lemon juice
  • 1 tsp mustard seeds
  • 1 tsp Cumin seeds
  • ¼ tsp hing
  • Oil
  • 1 tsp turmeric powder

Method:

  • Boil potatoes in pressure cooker or instantpot
  • Peel them and cut into small cubes
  • Make a coarse green paste of ginger, garlic, green chilies, cilantro, curry leaves
  • Take a pot, add oil and heat it
  • Add mustard seeds, cumin seeds and let them crackle

  • Add hing and then the green paste
  • Saute until it changes color slightly and rawness goes away
  • Add chopped onion and fry it until it becomes translucent
  • Add turmeric powder and mix
  • Lastly add potato pieces, mix and cook it for 2 minutes with lid on
  • Adjust salt, add lemon juice and serve hot with rice or roti
