The Poha recipe is a popular staple breakfast in Maharashtrian made from flattened rice (poha), vegetables, herbs, and spices.  There are many variations of this dish like onion-poha, eggplant-poha, or potato-poha.

Ingredients:

  • 2 cups thick poha
  • ½ cup spring onion or regular onion pieces
  • ½ cup potato pieces
  • ¼ cup peanuts
  • Green chili or red chili powder
  • 1 cup mixed vegetables (optional)
  • 2 tbsp grated coconut
  • 1 tsp lemon juice

  • Oil
  • Salt
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • Cilantro

Method:

  • Cut onions or spring onions into pieces
  • Wash, peel, and cut potato into cubes
  • Rinse the thick poha in water by using a colander until they soften
  • Do not rinse too much or else they become mushy easily
  • Drain all the water and add salt, red chili powder, and mix well
  • Keep it aside
  • Heat oil in a cooking pot
  • Add mustard and cumin seeds and let them crackle
  • Add peanuts and fry them until they change color
  • Then add onions and fry them until they become translucent
  • Then add turmeric powder and potato pieces
  • After the potato pieces become soft, add all the veggies of your choice
  • Mix well, cover, and let them cook for 2-3 minutes
  • Lastly, add poha, and mix well
  • Adjust the salt, and add lemon juice
  • Cover the lid and steam for about 2-3 minutes on low flame
  • Poha is ready

You can use broccoli additionally: 

Serve hot after garnishing it with chopped cilantro and grated coconut.
