The Poha recipe is a popular staple breakfast in Maharashtrian made from flattened rice (poha), vegetables, herbs, and spices. There are many variations of this dish like onion-poha, eggplant-poha, or potato-poha.
Ingredients:
- 2 cups thick poha
- ½ cup spring onion or regular onion pieces
- ½ cup potato pieces
- ¼ cup peanuts
- Green chili or red chili powder
- 1 cup mixed vegetables (optional)
- 2 tbsp grated coconut
- 1 tsp lemon juice
- Oil
- Salt
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- Cilantro
Method:
- Cut onions or spring onions into pieces
- Wash, peel, and cut potato into cubes
- Rinse the thick poha in water by using a colander until they soften
- Do not rinse too much or else they become mushy easily
- Drain all the water and add salt, red chili powder, and mix well
- Keep it aside
- Heat oil in a cooking pot
- Add mustard and cumin seeds and let them crackle
- Add peanuts and fry them until they change color
- Then add onions and fry them until they become translucent
- Then add turmeric powder and potato pieces
- After the potato pieces become soft, add all the veggies of your choice
- Mix well, cover, and let them cook for 2-3 minutes
- Lastly, add poha, and mix well
- Adjust the salt, and add lemon juice
- Cover the lid and steam for about 2-3 minutes on low flame
- Poha is ready
You can use broccoli additionally:
Serve hot after garnishing it with chopped cilantro and grated coconut.
